serves 4- 6
Ingredients:
2 large chicken breasts
1 package rice noodles
1 1/2 cup mango salsa
1 tsp sugar
1 tablespoon chopped cilantro
1 half avacado, cubed
Heat up the grill. Season chicken lightly with olive oil, salt and pepper. Grill the chicken (10-15 min). Meanwhile, start mango salsa sauce. Add mango salsa and sugar into a saucepan over medium heat. Stir occasionally. After about 2 minutes reduce heat and let simmer. Prepare rice noodles per package directions. (Usually takes about 5 min after water boils). Drain noodles and place in serving dish. Slice chicken against the grain and place ontop of noodles. Add mango salsa. Top with avacado cubes and cilantro. Enjoy!
Tomato kebabs
1 lb grape or cherry tomatoes
10 whole basil leaves
*Bocconcini- enough for 3 or 4 per skewer
Wash the tomatoes and basil leaves. Assemble skewers alternating tomatoes, cheese and basil. Serve as an appetizer or side dish. *Bocconcini are Italian cheese balls. If you cannont find them, use low moisture mozzarella.
Minty Sun Tea
5 or 6 black tea bags
5 or 6 mint tea bags
Fresh chopped mint
Thinly sliced lemon slices
Sun tea jar
Fill sun tea jar with water and put in both the black and mint tea bags. Step in the sun for 3 to 4 hours. Serve over ice with a few lemon slices and a sprinkling of fresh mint.
