- Using a sharp knife, separate into the joint to thigh from body on each side.
- Separate the drumstick from the thigh using the same technique (cut through the joint, not the bone, wiggling the drumstick to locate the joint).
- Run your knife along the bone and separate the meat from the thigh and drumstick.
- Cut thigh and leg meat into thin slices.
- Use your knife tip to find where the wings and body connect.
- From the joint, separate wings from body on each side.
